1) If you're soldering a fitting onto an existing water line, open one or two faucets somewhere in the line to allow steam to escape.

2) During the installation, If you can't get all the water out of the pipe, the joint won't get hot enough to properly melt solder until all the water has evaporated. Avoid applying solder while the joint is steaming. Even if the solder appears to melt, the joint will probably leak.
